Our Yellowtail Amberjack is caught locally on a long line, which is then blast frozen to retain quality. Yellowtail has pale pink flesh with firm, large flakes and a sweet flavour – this fish is known for its delicious fatty meat, which can even be served raw as sushi. The fish is then portioned, skin on to make for easy preparation and cooking.
